Hotel del Luna is one of my favorite dramas. But I'm also a huge IU fan, so I'm probably biased. It's a good drama and female witch in charge is beyond amazing. It's hard hard find drama with string female lead who are not ways looking for a man to rescue them.
i'd suggest giving Extraordinary You a shot – it has the things you're looking for, though done in a different way than Hotel Del Luna. i wouldn't say it's totally devoid of cringe, because sometimes cringe is deliberately invoked since part of the premise involves poking fun at certain kdrama tropes. but would say it's worth a shot!

Production, Cinematography, character development, storyline (s), backstory, IU’s acting, character bonds, emotional / tear jerking moments even outside of the main characters, and the overall fantasy world.
Aesthetically speaking Hotel Del luna looks fantastic too and the visual cues in the series, with the use of neon colors and interesting scene composition, make this K-Drama visually pleasing to watch. Complementing this we have the best K-Pop soundtracks of the year combined with the visuals Hotel Del luna makes a powerhouse series. Yeah she's really good in that. She just melts into a really depressing character. And the way she develops I great. Exactly, in Hotel Del Luna her character has clear development, it's good. But in My Mister, the struggle is much more drawn out, it hurts to watch both the interior and exterior struggle of the character and as they grow and change.
